It’s an awfully dreary start to spring, 38 degrees and rainy. But just like every day, I woke up and took my dog walking.
Today is also day one of AIP. I took my initial measurements and put them in a form I made for myself to track any symptom changes or resolution.
For breakfast this morning I had a hamburger patty, seasoned heavily with salt, garlic powder and onion powder, cooked to a medium temperature. I served this on top of a bed of baby arugula and avocado. I made a simple balsamic vinaigrette with olive oil, balsamic vinegar, parsley and dried oregano.
It was surprisingly delicious, albeit not breakfasty.
For dinner, I grilled some chicken using a stove top grill pan. Again, seasoned with salt, garlic powder and onion powder. I had some leftover vinaigrette, so I had some baby arugula, some leftover green beans (yes, I know they are a legume, but they’re an immature legume and supposedly, not bad for you from an inflammatory purpose) and some mashed sweet potatoes. I am awful at remembering to cook things ahead of time and a sweet potato in the oven takes a couple hours. However, I found these steamable sweet potato cubes at Target! I steamed them, added cinnamon and maple syrup and a little bit of organic unevaporated cane juice sugar and beat them with a hand mixer. They definitely called out for some sort of cream or butter, I think I might try adding coconut cream next time. However, they were still a nice filling addition and made the meal not feel so “diety”
I ended the night with a nice warm cup of black tea with a little bit of unevaporated cane juice sugar.
And guess what! I don’t feel deprived at all. In fact, I am totally fine eating these exact same meals tomorrow! I also have some frozen, wild caught salmon that is unseasoned from SAMs club and a couple of beef roasts that I found on sale at Kroger. Those will be great meals as well, and I’ll work on figuring out how to start compiling recipes to share with anyone who might need them.
